Salmon Fishcakes & Salad

This evening we had salmon fishcakes. I used a tin of pink salmon and mashed potatoes, spiked with spring onion and cornichons and bound with beaten egg.

An excellent way to use up leftover mash.

  3. Welcome back, Gai. I keep meaning to make fish cakes, but always end up buying them. Perhaps when life gets calmer. It's been a bit chaotic lately, but it looks like things might get back to what passes as normal, soon. I might return to blogging over the next few weeks with a bit of luck.
