I love rice in any form and could happily eat it on its own with just a sprinkle of soy sauce or a dollop of yoghurt.
I made a deliberate attempt to go veggie because I realised, to my horror that every one of my dinners so far this month has contained meat (or fish). So much for my resolution to eat less meat!
I love the versatility of risotto. You can add just about anything to it. Great for using up leftovers. Not sure the Italians would approve. There's probably a whole set of rules to be followed, but who cares!
